OK, I think I understand. Let's see if I can convey my
point of view.

I think the key is actually in your first sentence:
"I found hugin's document handling very different from
other document oriented applications"
Hugin is _not_ a document oriented application - It is
a workflow oriented application. Load images -> choose
control points -> run optimisation -> produce output.

There are many ways to produce a visual metaphor for
this thought process, but given the various
constraints imposed on hugin as well as history, the
best way (so far) to represent the workflow is the
sequence of tabs. This might change if we can find a
better way.

Now, given that we are representing a workflow, it
makes sense (to me anyway) that when you open a new
workflow (project) that the old workflow is closed. 

Perhaps an alternative would be to open a new window
(also with multiple tabs) when you open a new project
so that two or more workflows could be open
simultaneously. This would require some thought and
discussion obviously.

Does this all make sense, or is the interface making
the process of producing a panorama more difficult
rather than easier?
