The first optimiser option, "positions (incremental)", uses an 
internal hugin optimiser.  All the other options use the PTOptimizer 
utility which is part of the libpano12 package.  As far as I know, 
this works fine on OSX.

Try building libpano12 using make.  You should end up with working 
binaries for libpano12.dylib, PTOptimizer and panoinfo.
